Why Eat Heritage? Let’s use pork as an example. Commercial factory-farmed pigs are confined indoors, and have been bred to produce very lean meat that is often dry and fairly tasteless. Heritage breeds have more intramuscular marbling of fat, which makes for moist olde-fashioned flavour. Our pigs are raised outdoors on pasture, free to root, play, wallow and explore which means happier, healthier animals. They grow more slowly, more naturally. By choosing them, you are also helping to conserve heritage breeds because more small farmers will continue to raise them, increase their numbers and conserve their rare genetics. This also applies to our Shropshire sheep, poultry and all heritage breed livestock.

Where To Buy? WHOLE HERITAGE SHROPSHIRE LAMB

Shropshire lamb is savoured by food connoisseurs who appreciate their exceptional flavour. Choosing Wholearth Heritage Shropshire lamb ensures a future for this superb breed, whose long history of excellence dates back to the 18th century. Last year we sold whole lamb by boxed weight. This year we are opting for hanging weight.

Q. How much meat is in a lamb?
A: Our lambs dress out at 40-50lbs hanging weight.

Q. Why are whole lamb prices not for cut and wrapped lamb any more?
A. To give the greatest flexibility in available cuts, we now use hanging weight as our baseline. Cut and wrap weight can change dramatically depending on the cut. Charging for hanging weight standardizes the price.

Q: What is the average price of a whole lamb?
A: Your price would range from $290. to $360. for a whole lamb, depending on it’s size, which includes the price of the lamb, our transportation to and pick-up from, abattoir fee, disposal fee, cutting, wrapping and freezing.

Q. When is the lamb available?
A. We have a limited number of Shropshires available as market lambs because the majority of this rare breed are reserved for registered pedigree breeding stock. Best to reserve one, and your lamb will be ready in the fall, September thru November 2010.

THE WHOLE HOG HERITAGE PASTURED TAMWORTH PORK

• Our July born litters are almost ready if you would like to reserve now. They were born and raised on pasture, and are still outside (with cozy winter shelter) but now being finished with grain and hay. You’ll have an entire heritage Tamworth with this order, cut and wrapped to your specifications. If you’d like our butcher to smoke your hams or bacon or make sausage, he’ll charge a bit extra…or try it at home yourself.)

An average 250 live weight hog yields an average 180 lb hanging weight which yields an average 140 lbs finished or boxed weight. So your order of wrapped packaged meat, trimmed, cut into bone-in chops and roasts, regular ground pork/sausage, with organs and crackling on, etc., consists of approximately:

  • 24-28 lbs. pork loin and butt chops (we like to do fewer chops at 1.25” thickness)
  • 12-20 lbs. ground pork and/or ground sausage
  • 4 packages of spare ribs (1.5 lbs.)
  • 2 very large hams (15-18 lbs.; or can be cut smaller, say 8 hams into 3-4.5 lb roasts)
  • 6 shoulder roasts (4 lbs.)
  • 16-20 lbs. bacon or pork belly
  • 4 smoked hocks (0.75 lbs.)

HERITAGE BOURBON RED
• Our MeatShareholders are given first priority to reserve one of our limited number, pasture-raised Heritage Bourbon Red turkey every spring. We do not use medicated starters or growers on our poultry. You can choose a size ranging between 8 and 20 lbs or so. Their taste is incomparable to commercially bred birds. Order the quantity you would like by April, with a deposit of $40. per turkey. We’ll raise your holiday dinner for you!

DuckShare

PEKIN & MUSCOVY
• We have naturally raised Pekin and Muscovy duck averaging 5 lbs each if you’d like to add to your order. Processing costs are quite high for ducks, but this succulence is worth it! Order the quantity you would like by April, with a deposit of $20. per duck.

How & When Will I Receive my MeatShares?

PICK-UP We encourage you to pick up your MeatShares at the farm. You’ll enjoy the beautiful countryside on the drive up, have the opportunity to get to know your farm, learn a little about what we do and see how we’re raising your food, and walk in the fields and woods if you like.

DELIVERY If you prefer, we deliver in Toronto once a month as different items are ready, you can come to a nearby designated pick-up point for an extra $8. per delivery or have it delivered to your door for $20. per delivery. Your share is split up into in 3 or 4 deliveries (depending on your freezer space and when items are ready). For example, if you received a delivery in April and your freezer is still full you could wait and get your next one in June instead of May. The next Toronto and area delivery is scheduled for mid-January.

We email everyone prior to each delivery, and most shareholders requesting door-to-door leave out a cooler with ice pack. If that is not an option (apt or condo) we arrange best time with you individually. Some even accept their shares at their workplace.

Various items mature at different times, and we’ll do our best to make sure you have a variety but it’s not always possible, so you may at times receive all your chicken or beef at once.

ORDER EARLY IN THE YEAR Plan ahead, calculate how much meat your household wishes over the year, so you’ll be sure to have this years in the freezer for next winter, spring and summer when your next years are growing. If you would like a second and third MeatShare with just chicken, that’s fine too, but we’ll need to know when starting our chicks.

How Much Will Fit in My Freezer?

Generally an average size fridge top freezer can easily accommodate a delivery with room left over. One cubic foot of freezer space will hold approximately 25 to 30 pounds of meat. This is about half of the freezer above an average refrigerator.
